Cajun Salmon Alfredo

Ingredients:

For the Salmon

  • 4 salmon filets (6 oz each)

  • 2 tablespoons olive oil

  • 1 tablespoon Cajun seasoning

  • Salt and pepper, to taste

  • 1 lemon, sliced

For the Alfredo Sauce

  • 2 tablespoons butter

  • 4 cloves garlic, minced

  • 1 1/2 cups heavy cream

  • 1 cup grated Parmesan cheese

  • 1/2 teaspoon Cajun seasoning (adjust to taste)

  • Salt and pepper, to taste

  • 1/4 teaspoon red pepper flakes (optional, for extra heat)

  • 2 tablespoons chopped fresh parsley (optional, for garnish)

For the Pasta

  • 12 ounces fettuccine or your pasta of choice

  • Salt for pasta water

Instructions:

  1. Cook the Pasta:

    • Bring a large pot of salted water to a boil.

    • Add the pasta and cook according to the package instructions until al dente. Drain and set aside.

  2. Prepare the Salmon:

    • Pat the salmon fillets dry with paper towels.

    • Rub both sides of the salmon fillets with olive oil and sprinkle with Cajun seasoning, salt, and pepper.

    • Heat a large skillet over medium-high heat. Add the salmon fillets and cook for 4-5 minutes on each side, or until the salmon is cooked through and flakes easily with a fork. Squeeze fresh lemon juice over the salmon as it cooks.

    • Remove the salmon from the skillet and set aside. Keep warm.

  3. Prepare the Alfredo Sauce:

    • In the same skillet, reduce the heat to medium and add the butter.

    • Once the butter is melted, add the minced garlic and sauté for about 1 minute, or until fragrant.

    • Pour in the heavy cream and bring to a simmer. Cook for 2-3 minutes, stirring frequently.

    • Gradually add the grated Parmesan cheese, stirring constantly until the cheese is melted and the sauce is smooth.

    • Season the sauce with Cajun seasoning, salt, pepper, and red pepper flakes (if using). Adjust seasoning to taste.

  4. Combine Pasta and Sauce:

    • Add the cooked pasta to the skillet with the Alfredo sauce.

    • Toss to coat the pasta evenly with the sauce. Cook for an additional 1-2 minutes until the pasta is heated through and well combined with the sauce.

  5. Serve:

    • Divide the Alfredo pasta among serving plates.

    • Top each plate with a salmon filet.

    • Garnish with chopped fresh parsley, if desired.
