Cajun Salmon Alfredo
Ingredients:
For the Salmon
4 salmon filets (6 oz each)
2 tablespoons olive oil
1 tablespoon Cajun seasoning
Salt and pepper, to taste
1 lemon, sliced
For the Alfredo Sauce
2 tablespoons butter
4 cloves garlic, minced
1 1/2 cups heavy cream
1 cup grated Parmesan cheese
1/2 teaspoon Cajun seasoning (adjust to taste)
Salt and pepper, to taste
1/4 teaspoon red pepper flakes (optional, for extra heat)
2 tablespoons chopped fresh parsley (optional, for garnish)
For the Pasta
12 ounces fettuccine or your pasta of choice
Salt for pasta water
Instructions:
Cook the Pasta:
Bring a large pot of salted water to a boil.
Add the pasta and cook according to the package instructions until al dente. Drain and set aside.
Prepare the Salmon:
Pat the salmon fillets dry with paper towels.
Rub both sides of the salmon fillets with olive oil and sprinkle with Cajun seasoning, salt, and pepper.
Heat a large skillet over medium-high heat. Add the salmon fillets and cook for 4-5 minutes on each side, or until the salmon is cooked through and flakes easily with a fork. Squeeze fresh lemon juice over the salmon as it cooks.
Remove the salmon from the skillet and set aside. Keep warm.
Prepare the Alfredo Sauce:
In the same skillet, reduce the heat to medium and add the butter.
Once the butter is melted, add the minced garlic and sauté for about 1 minute, or until fragrant.
Pour in the heavy cream and bring to a simmer. Cook for 2-3 minutes, stirring frequently.
Gradually add the grated Parmesan cheese, stirring constantly until the cheese is melted and the sauce is smooth.
Season the sauce with Cajun seasoning, salt, pepper, and red pepper flakes (if using). Adjust seasoning to taste.
Combine Pasta and Sauce:
Add the cooked pasta to the skillet with the Alfredo sauce.
Toss to coat the pasta evenly with the sauce. Cook for an additional 1-2 minutes until the pasta is heated through and well combined with the sauce.
Serve:
Divide the Alfredo pasta among serving plates.
Top each plate with a salmon filet.
Garnish with chopped fresh parsley, if desired.
